You can do two things, export the objects from the old server, install a new SIM server and use the export to fill the new setup. Then you need to copy credentials and run and identification.
The other option is to first update your old server to SIM 7.5 1 run a clean install on the new server and configure your new config to use the old database. Both need more explaining what do you want to use?
